About Black Hills Brick Oven Pizza

Owners, Mark and Krisi Friedel are very excited to be the first to bring the mobile wood fired brick oven experience to the Black Hills.

First introduced to the idea by a friend and former business partner in 2012, they went to work researching oven/trailers and builders, dough recipes, pizza recipes, and much more. After looking at a couple of different ovens they hired a company from Boulder, Colorado to design and build their new dream. With the help of the State Health Dept. the trailer was built to their specifications and in early 2014 they pulled it home to Spearfish and began the process of seasoning the oven and working on putting the final touches on their new business adventure.

Their daughter, Jenna Storbeck has been instrumental in the business from the beginning. Having 10 years experience in the food industry, including: restaurant, catering, food prep and food safety,  she is ServSafe certified and also tends the oven.

In May of 2014, they formally got the dough rolling. Catering three graduation parties and setting up on a regular basis at Crow Peak Brewery. They have since become a staple at the Spearfish Downtown Friday Nights celebrations that run throughout the summer months. Spearfish’s Festival in the Park is another place you will be able to get the hand made pizza fresh out of the oven experience.

The summer of 2015 they cranked it up a notch, firing up the oven 4-5 days per week around the Hills. From Belle Fourche to Rapid City, people have been tasting the wood-fired difference. Let them make your next gathering like nothing you have ever experienced.

Their mobile oven makes weddings, family reunions and any gathering a “Momma Mia” pizza experience.

Brick Oven is Better!

Why cooking Pizza in a Wood-fired Brick Oven is Better??

The smoky flavor, crunch toppings, and crisp crust with fluffy edge is something you can only get with a Brick Oven. Plain and simple…

With the Brick Oven’s high temps and fast cooking time, many pizzas can be made in a short amount of time (3 min or less per pizza). The article below is taken from www.helium.com. It explains very well the benefits of cooking with wood in a Brick Oven.

The Benefits Of Brick Oven Cooking

Since the dawn of civilization, wood-fired brick ovens and pizza have been in existence. Discoveries of brick ovens have been made in the excavations of virtually every ancient culture. Today, the brick oven is as commonplace in Italy as the barbecue grill is elsewhere. There are many benefits of pizza made in a brick oven which cannot be duplicated in a conventional oven.
